Friday in Lent: Monk on the Way to Snack and a prayer

 

Recipe for Friday in Lent: 

I’ve made a lot of lentil soup in my day..And this is really good.

Lentil Soup with Rice

 

Olive oil

1 chopped onion and 2 cloves of garlic

4-5 cups of water or veggie broth

2- 3 cups chopped carrots and celery

1/4 cup of  rice

2 basil leaves

dried rosemary

herbs de provence

salt to taste

 

You have to put enough oil in the pot to cover the bottom one lentil deep. Then add the chopped onion and garlic; saute till transparent. Add one cup of rinsed raw lentils..Stir a few seconds. Add the 4-5 cups of veggie broth. (start with 4 you can always add more) bring to a boil and simmer 30 minutes.

 

They should be done but, if there’s a little crunch it’s alright. Add the herbs and salt to taste with the chopped carrots and celery. You can substitute a cut and cubed potato in place of a 1/4 cup of rice if you like. Simmer 20 more minutes until all is cooked. Top with some Parmesan cheese.

 

Combines nice with a salad on the side and a crust of homemade foccacia.

have mercy on me at the end of my life ,

when my soul shall be troubled,

and my spirit disquieted within me.

Amen
